Parfait with mango and lime

Parfait with mango and lime
  • 2 mangoes
  • 3 limes
  • 4 egg yolks
  • 75 g of sugar cane
  • 285 ml cream

Used: Mango Puree

Method of preparation:

Cover the cake pan film. Make the mango puree, grated lime zest and juice. Whisk all in a blender. In a water bath whisk the egg yolks with the sugar until increased by 2 times. Remove from heat and add the mango puree. Leave the mixture to cool. Well whip the cream, add the mango mixture and pour into a form. Place in the freezer for at least 8 hours or overnight.

So 10 servings goodies ready!
