Carrot soup with mango
  • 1/2 mango
  • 1 sweet carrots
  • 1 small potato
  • 1 bulb onion
  • 1.5 cups vegetable or chicken broth
  • Spices - salt, Tabasco sauce, red, cinnamon, ginger, lemon jam or honey - to taste
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon of butter
  • cream - to taste

Method of preparation:

Carrots, potatoes, onions, mango peel and cut into cubes. Heat the vegetable oil. First fry onions until golden. Then add the potatoes. When the potatoes are browned, add the carrots, then mango. Brown the vegetables. Add lemon jam (no jam, then add honey), spices to taste and pour the broth. Reduce heat and simmer for 15-20 minutes. Beat soup blender, add a piece of butter. Soup served with lightly whipped cream. Sprinkle with croutons and pine nuts.
