Mango sorbet

Mango sorbet
  • 2 mangoes
  • 1 lemon
  • 150 g of sugar
  • 200 ml of water
  • 2 egg whites

Used: Mango Puree

Method of preparation:

Cook the syrup, boil water and sugar, stirring to dissolve sugar. Boil a few minutes, then remove from heat.

Chop the mango in a blender and pass the mashed potatoes through a sieve.

Stir the puree with the syrup. Add the lemon juice.

Add the mango weight of the egg whites, mix and place in a container.

Freeze the sorbet, uncovered. Stir occasionally to break up the ice crystals.
