Method of preparation:
In a saucepan with a heavy bottom together sugar and 240 ml of water. Heat, stirring until the sugar dissolves. Bring to a boil, simmer for 3 minutes, until a thin syrup. Remove from heat and allow to cool completely.
Wipe strawberries, cleaned of leaves. Chop if large strawberries. Put in a food processor. Cut the flesh of a large mango and add to the food processor. Make a homogeneous puree.
Beat in mashed strawberries and mango syrup with chilled beater and pour the mixture into a container suitable for the freezer. Freeze for 2 hours, until the mixture starts freezing around the edges, but still remain soft in the center.
Quickly loosen half frozen mixture with a fork, stir and return to the freezer for 2 hours, until frozen. But it should not be completely solid. Decomposed by the glass. Serve immediately with crusty pastry.
